I've been meaning to post this for awhile actually:
If you are vegan and you have not tried Daiya Cheese you need to get your head checked, this stuff is wonderful.
The mozzarella being better than the cheddar in my opinion but I do still like it. I hear they have a pepper jack option also but I haven't seen it anywhere.

Chicago Weekend
The boy and I went to Chicago last weekend for a little out of town time, and it was lovely. Here are few pictures I managed to take (I must have been so excited to be out of town that I couldn't remember that I had a camera)

breakfast.
vegan omelet oh my
Recipe:
1 pkg. silken tofu (or regular extra-firm silken tofu)
about 3-4 tablespoon soymilk/unsweetened almond milk
1 tablespoon nutritional yeast
1 1/2-2 tablespoon potato starch or cornstarch
1 teaspoon tahini (if you happen to have on hand..)
1/2 teaspoon garlic powder
1/2-1 teaspoon turmeric
salt and pepper to taste
Combine everything in the blender and blend until smooth. Spoon into NONSTICK pan and fill'er up...cover for about 3-5 minutes and fold.
(I cooked it on medium heat)
filling:
anything you would like :)

(this made about 4 with some "batter" left over so probably in the end about 6 or 7)

Happy Valentines's Day
We don't get all crazy and go all out on valentine's day, but I don't boycott it like most of the people I know (I hate to hear about how your man doesn't need a day to show you he loves you he does it everyday, how its a hallmark holiday, or how alone you really feel) valentine's day gives me a chance to bake,buy some pink shit, eat way too many treats, and get all lovey dovey :)
Anyhow my wonderful boyfriend (who shows me he loves me everyday also) ordered a treat box from my favorite bakery (pattycakes in columbus ohio) for me..it came a few days early but it was still sweet<3
